BOTTOM LAYER:
Cream together in medium bowl:
½ cup butter 1 cup packed brown sugar
Beat in 2 large eggs, 1 at a time, beating well after each addition. Add ½ tsp. vanilla and mix.
Add: ½ cup All purpose [regular or Gluten free] flour
¼ cup cocoa ¼ tsp. baking soda 1/8 tsp. salt
Beat until moistened and turn into a 9”x9” greased pan.
Bake in 350F oven for 15 minutes. Do Not overcook. Cool thoroughly.
MIDDLE LAYER:
In a separate bowl, beat together:
2/3 cup softened butter 2 cups icing sugar
1 ½ Tbsp. milk 1 tsp. peppermint flavouring
5-6 drops green food colouring
Spread over cooled bottom layer.
TOP LAYER:
Melt together 1 cup chocolate chips and 3 Tbsp. butter
Spread over the mint layer.
Chill overnight until set and cut into squares.
