POLYNESIAN RICE-A Recipe from Nancy


I often make a large casserole of this and freeze some for a later meal...

1 cup uncooked long grain rice ( I use Basmati white or brown-remember to soak it for 20 minutes, after rinsing]
Step 1: In a pan, melt ½ cup butter.
Add rice,
1 large chopped onion,
1/2 tsp. salt,
¼ tsp pepper
Cook stirring often until golden brown.
Make chicken broth[11/2 tsp. chicken soup base to 11/2 cups water] and add to above.
Mix and put in a greased casserole dish.
Bake at 350F for 1 hour.
Note: This dish can be made ahead of time and re-heated at serving time. If cold, requires more cooking time
[approx.1 ½ hours]
THIS RECIPE GOES WELL WITH TANGYSWEET AND SOUR MEATBALLS.
NOTE: to make it gluten free, use G.F. soup base.
